Our
farmers

On their family-run farms, our farmers take care of the cows and goats in small to medium-sized herds, to maintain their well-being and the quality of their milk. The animals are milked every morning and evening. They graze in the fresh air with pure water and are fed only fresh grass, hay and NO GMO fodder according to the strict specifications of the Consortium. Use silage is forbidden.

Cheese
dairies

There are no breaks or holidays for our 17 dairies, where the cheesemakers put all their knowledge to work every day with dedication, skill and passion. The cheesemakers all have their own secrets. From heating and breaking the curd, to separating the whey, pressing and drying, everything is controlled personally one step at a time.

from the alpine pastures

The cows grazed at high altitudes surrounded by nature, mountain herbs and flowers in the summer. We do it this way because we respect the culture and traditions of our land and have chosen to proudly carry on the practice of mountain pasturing with all the hard work it implies. The Sapori di Malga cheeses are the result, a real speciality in our production, with unmistakable flavour dynamics.
