PUZZONE DI MOENA IS A PDO (PROTECTED DENOMINATION OF ORIGIN) CHEESE, MADE FROM RAW MILK, TYPICAL OF THE FIEMME, FASSA AND PRIMIERO VALLEYS.

Puzzone di Moena is characterised by a robust, intense, slightly salty and pleasantly sharp flavour with a distinctive bitterish aftertaste. Its name, which can translate simply as “smelly”, derives from its intense and penetrating aroma created by daily "sponging" with warm brine throughout the ageing process. Cheeses like these are known as “washed rind” and take on a colour that can span from yellow ochre to light brown or reddish.

There is historic evidence of washed-rind cheese with a characteristically pronounced aroma being made for a very long time in cooperative dairies and farms throughout the Fiemme, Fassa and Primiero valleys.
Also known as Spretz Tzaorì, which means "tasty cheese" in the local dialect, Puzzone di Moena is certainly one of the most appreciated cheeses by connoisseurs and consumers who seek healthy, tasty products with a bold personality.
