Goat cheeses are a little great rarity on the Trentino cheese scene. There are many small goat farms scattered across the valleys from where the milk for these tasty cheeses is obtained: from Vallagarina (Caprino di Sabbionara) and Val di Fiemme (Caprino di Cavalese), to Val di Non (Caprino di Fondo and Caprino Monte Ozolo).
