Affogato di Sabbionara

AFFOGATO DI SABBIONARA IS THE COMBINATION OF TWO LOCAL PRODUCTS FROM THE LOWER VALLAGARINA VALLEY. IT IS A CHEESE MADE FROM RAW LOCAL MILK SOAKED IN ENANTIO "TERRA DEI FORTI" RED WINE FOR 15-20 DAYS, HENCE THE NAME “DROWNED”.

At the end of the ageing process, the cheese turns a vibrant purple. Holes are pierced through the upper part of the rind to allow the Enantio wine to penetrate inside creating violet veins in the cheese and a unique flavour. The taste is strong with a distinctive aroma conferred by the wine in which it is soaked. It can become slightly sharp over time.

Interesting fact: the Affogato di Sabbionara cheese wheels are turned upside down every day during the ageing process to make sure the wine is absorbed uniformly by the cheese.

Characteristics:

Semi-aged cheese. Compact but deliciously soft texture with visible, scattered eyes. Infiltration of wine into the cheese during ageing by soaking.

Ingredients:

Milk, salt and rennet; soaked in Enantio red wine. No additives or preservatives.
