UNTIL THE BEGINNING OF THE 19TH CENTURY, IN TRENTINO THE CHEESE PAR EXCELLENCE WAS THE ONE PRODUCED ON THE ALPINE SUMMER PASTURES - CALLED “MALGA”. MALGA CHEESES HAVE AN UNMISTAKABLE FLAVOUR BECAUSE THEY ARE MADE FROM THE MILK OF COWS GRAZING IN THE OPEN AIR, IN A HEALTHY ENVIRONMENT, FED ON THE GRASS OF ALPINE PASTURES RICH IN THE PRECIOUS HIGH-MOUNTAIN FORAGE PLANTS.
