Vezzena di Lavarone

VEZZENA DI LAVARONE WAS ALREADY HIGHLY APPRECIATED AT THE BEGINNING OF THE 1900S. IT IS AN EXCELLENT RAW MILK CHEESE, TRADITIONALLY ENJOYED SLICED OR GRATED, MADE FROM THE MILK OF THE LAVARONE, FOLGARIA, BRENTONICO, VALLAGARINA AND VALSUGANA PLATEAUS.

Vezzena is an aged cheese with an intense, tasty and savoury flavour, which becomes more pronounced and tends towards sharp in the "aged" version. The aroma and smell are unmistakable and characteristic, influenced by the typical mountain polyphitic fodder.

Vezzena was almost the only cheese used for seasoning in Trentino before World War I. Production was modest at that time and since pasta was still not very present in the old Trentino cuisine, this typical cheese was grated on soups and minestrone, on dumplings or the other dishes of the day.
