FORMAE VAL DI FIEMME IS TYPICAL OF THE NAMESAKE VALLEY AND BELONGS TO THE LARGE FAMILY OF LOCAL CHEESES, WHICH ARE STRONGLY AND HISTORICALLY LINKED TO THE LOCAL TERRITORY.

Formae Val di Fiemme has scattered and visible eyes. It has a bold flavour, due to the processing of unpasteurized milk and the typical ageing of washed-rind cheeses caused by sponging with brine.
You should definitely also try the Formae Val di Fiemme Riserva, which is characterized by a longer aging period that enhances its aromas.
