FORMAE VAL DI FIEMME IS TYPICAL OF THE NAMESAKE VALLEY AND BELONGS TO THE LARGE FAMILY OF LOCAL CHEESES, WHICH ARE STRONGLY AND HISTORICALLY LINKED TO THE LOCAL TERRITORY.

Formae Val di Fiemme has scattered and visible eyes. It has a bold flavour, due to the processing of raw milk and the typical ageing of washed-rind cheeses caused by sponging with brine.
Formae Val Fiemme Riserva, characterised by longer ageing of at least 120 days, is well worth sampling.
