PRIMIERO STAGIONATO IS AGED FOR AT LEAST 6 TO 12 MONTHS. AT THE END OF THE PROCESS, THE CHEESE HAS A BOLD YET NEVER SHARP FLAVOUR, WITH HERBACEOUS AND FLORAL SCENTS AND LACTIC SENSATIONS.

The Primiero Stagionato is a washed-rind cheese made with raw milk that is washed regularly with warm brine during the ageing process.
Its production closely follows the pace of the seasons and the cow fodder that changes from month to month. This means that the same cheese made at different times of the year expresses different flavours and aromas precisely because it follows the times defined by nature.

Aged, washed-rind cheese. Semi-hard, soft, springy, light yellow-white texture with scattered, irregular eyes.
